Coco-NUT-y Cupcakes!


 The people who know me best, know about my big sweet tooth! And I have recently learned how to FILL cupcakes (which I think is really cool!). So I had to try it!

I thought that Coconut-filled Chocolate Cupcakes would be delicious! Here's how I did it!



First mixed a chocolate cake mix and put it into a cupcake tray. Cook them for the time recommended on the package. 


Then I made my filling:

1 cup of heavy cream
1 cup of sweetened shredded coconut
2 tbsp. corn starch

Heat in a saucepan until thick.


I found this amazing icing dispenser! I put on the cupcake filling tip and was ready to go!


I found that I filled them a little too much but you can figure out what works for you!


Decorate with vanilla icing (chocolate would be delish too) and sprinkle some shredded coconut!

BBQ Chicken

BBQ season has arrived!
Although I have one problem...I don't have a BBQ. I recently moved into an apartment which unfortunately doesn't have spot for a BBQ. None the less, this doesn't curb my cravings for BBQ food! So, in the spirit of summer coming I made homemade BBQ chicken.

Mix together:
6 tbsp. ketchup
2 tbsp. honey
2 tbsp. soya sauce
1 tbsp. lemon juice
2 tsp. freshly grated ginger
2 tbsp. brown sugar

Then, cut up the chicken into bit size pieces and marinate them in the sauce. (Leave a little sauce on the side for dipping!)


I put the pieces of chicken on skewers along with red peppers. Put them in the oven for 25 minutes at 350 degrees.






This with some rice and a little sauce drizzled over - tasty, tasty!
Definitely quenched my BBQ craving!

Dinner for Two

My man and I decided to make dinner together tonight! While it didn't go as smoothly as expected- with the numerous fire alarms, smoke invading the apartment and multiple spills- it was still delicious!

We started by marinating the steaks early in the day with this scrumptious Roasted Garlic & Herb marinade.  
My part was the homemade yam fries!
1 yam sliced into fries-like pieces
1-2 tbsp olive oil
1 tbsp dried basil
Salt & Pepper

Bake at 400 degrees for about 20 minutes or until lightly browned, flipping about halfway through.

You can't eat yam fries without Chipotle Dipping Sauce!

After all of the hubbub, the meal turned out fabulous!

A Stroll with Mom

I had a relaxing stroll in the park with my Mom today. It was busy with Ultimate Frisbee games and white tents being set up for the annual Teddy Bear Picnic! But I was most excited about the newly planted frogs in the Children's Park! 

These frogs are covered in different plants and each have a different instrument!

I had to get a picture!
Mom found another interesting planted creature!


We stopped at a cute little coffee shop and had a soothing London Fog with soya milk!

Grandma's Pancakes

From as far back as I can remember, my Grandma has made the most mouth-watering pancakes! Even though her recipe is a secret, I have been trying to master these pancakes for a while. Now I think I have gotten close and I'll let you in on this yummy recipe!

3/4 cup flour
1 1/4 cup milk
1 tbsp melted butter
2 eggs

Mix the flour and milk.

Add the melted butter and eggs. Then pour the batter into a heated pan, making a thin layer. Cook until brown on both sides.

The next bit is what makes these pancakes special!!

Sprinkle the plate with sugar and then place the pancake on top.

Sprinkle more sugar on the pancake and roll up!

Once rolled up, sprinkle some more sugar. (You can never get enough sugar!)
And finally, drizzle some lime or lemon juice on top! 


Voila!

The Park

After, what seemed like, continuous showers, I jumped on the chance to go for a walk on a beautiful night with the sun peeking out.


My new favourite hotspot for quiet walks and rollerblades with friends is, the always bustling, Assiniboine Park. 






I think that it's safe to say that I will be a permanent fixture at the park with the summer just around the corner!

Dinner with Amazing Friends

I spent last night with some great friends dinner and drinks! 
I tried a new pizza dough recipe It is easy and makes about 2 medium pizzas. 


I made a classic pepperoni, mushroom and green pepper pizza.


I also dared to explore some different pizza toppings - pesto and mozzarella! Yum, yum. 

My good friend Deniz concocted a deliciously fresh lychee cocktail perfect for the soon approaching summer!




1 oz peach vodka
2 oz lychee juice
top off the drink with diet lychee soda


To cap off the meal we had chocolate fondue with angel food cake, strawberries and bananas!






What could be more perfect than spending the long weekend with fabulous friends?!
