Thai Mussels

I'm sorry for the long hiatus, I've been stuck under children's books planning for my days at school! As much as I'm enjoying my time at school, I miss the taking pictures and writing blogs posts. So I'm hoping to find a happy medium!

Amidst my school work, I still like to try new and interesting recipes. My most recent being mussels! I have never cooked mussels before, but they are sooo delicious that I took the challenge and it ended up being much easier than expected!


Thai Mussels

1 tbsp. lime/lemon juice
1 tsp. fish sauce
3/4 tbsp. red curry paste
1 tsp. minced garlic
1 can coconut milk
1 lb. mussels
chopped cilantro

First mix together ingredients in a large saucepan and bring to a boil. Once boiling add mussels and steam for 8-10 minutes or until mussels are open.
Sprinkle cilantro on top and serve with bread!

Snappy Shrimp Salad Rolls

Now that school has started again, I'm needing easy meals that I can make quickly when I get home. Salad rolls are just the thing! They're a fresh, healthy and extra tasty meal!


You need:
Rice paper
Rice vermicelli noodles
Lettuce
Cucumber
Avocado (optional)
Mint (optional)
Shrimp

You'll need to rinse the rice paper under water and boil the rice noodles for about 5 minutes.
Once you're done, plop a bunch of noodles onto one softened rice paper.

Add your chopped veggies.

Then add shrimp and roll.

 Serve with hoisin sauce (I like to water it down a little bit - it's pretty sweet!)

Family Gathering

Just before the rush of school starts, my family got together for a potluck dinner! Our dinners, like most families gatherings, include an abundance of delicious food and fabulous company.
 Mom's mini cornbread loafs!

 And two choices of chili.

 My cousin, K's, delicious zucchini and graham cracker cupcakes.

 Yum, yum!

Summer has come to an end, fall is around the corner and this was a great way to wrap up!

Chinese Festival

Earlier this week I saw an article advertising the Chinese Festival happening this weekend. The pictures of acrobats intrigued me and when I heard there was Chinese food kiosks I was sold.

W and I headed over there with our tummy's rumbling and our eyes ready for a show.
And that was just what we got!

One kiosk was serving up beef and lamb skewers.

It was a perfect appetizer for our impatient tummys.

 Then we found ourselves some buns and dumplings at the North Garden kiosk.

Mango Juice with Tapioca to wash it all down.

Last but not least we headed over to another kiosk and picked up our last plate of food!

With this plate of chow mein, chicken balls, chicken and egg rolls, we went to sit and enjoy the show!

There were so many amazing acts in this show! Some performances were from the Manitoba Great Wall  Performing Arts and others came all the way from China to perform for us!

Sushi Ai

Last week I had to leave the cabin early to come into the city for some interviews. 
This week I accepted a job offer!! Yay! 

W and I went to Sushi Ai to celebrate. We've tried to eat here before but it was always busy. So, lucky for us, we got a table this time!

It is a cute little place in the St. Vital area. If you live in the area, it would be a great stop on your way home!


We ordered some delicious Shrimp and Yam Tempura.

If you're celebrating or have a big appetite, I would suggest ordering the Maki Combo.
With the Maki Combo you order 7 different rolls for $28!

The Teriyaki Chicken Roll, Spicy Salmon and the Dynamite Roll.

Here is the Alaska Roll, Philadelphia Roll, California Roll and Bakudan Tuna Roll!

I would definitely recommend this place, it is delicious and not to expensive!

Steak and Mango Salad

 I love steak. I love mango. And I love this new salad recipe I found!

I have been trying new things in my salad and making them interesting. So, this salad recipe intrigued me.

You start with romaine lettuce or spinach, long slices of cucumber and mango.

Add the steak, cooked to your preference.

Then you make the dressing:

3 tbsp. lime/lemon juice
2 tsp. fish sauce
2 tsp. sugar
2 tsp. hot chili garlic sauce

Pour the dressing over your salad and enjoy!

This salad is quite filling and would be great for lunch OR dinner!

Asia City

When you first get back into town after a vacation, your fridge is bare and there is nothing to eat. So I went to one of my favorite places, Asia City, to get some delicious Vietnamese food. I hadn't been here in a while so after coming back from Clear Lake it was a perfect time to pop in!

I got a few of my favorite dishes!

For a sweet treat at the end, a Yellow Bean Sesame Ball!
I wish I had taken a picture of the tasty inside but I gobbled it down too quickly!

There is a couple of locations in the city. One on Pembina and one on Sargent.
You should definitely try it out!
